We sometimes conduct a questionnaire to understand vegetable consumer trend in Japan.
The other day, we surveyed what kind of vegetable Japanese people stock in their home regularly.
We surveyed about 300 women who is from 20’s to 60’s, and asked regular food stock in their refrigerator or in their home.
The research showed that the most of the vegetable regularly in stock is onion (87%), the second is carrot (76%) and the third is potato (76%).
The reason of choosing those 3 vegetables is that good usability for cooking (75%), good taste (52%), and long lasting (47%). We find that Japanese consumer choose vegetable not only from their favor but also its practical utility.
Onion, carrot and potato rather keep good condition compared to other vegetables in stock.
On the other hand, we searched that what kind of food in their refrigerator they mostly discard.
The research show that among the food which is thrown away, vegetable is top ratio as 70%, the second is processed food as 14%, and the third is fresh food (meet) as 10%.
We also asked them whether they know preservation method of vegetable and if they try the method. Most of their answer is that they do not care about vegetable preservation method.
There are a lot of methods to store vegetable longer, so we may show those method when we get a chance.
