Collaboration between food sciences and the business community yields concrete results

Nutrition, health and eating behaviour is one of the main research domains of Wageningen UR (University & Research centre). The recently published book ‘Food, Nutrition & Behaviour - Research for healthy eating, healthy living’ presents the concrete results of an excellent collaboration between food scientists and the business community, government agencies and health organisations and shows just how broad and specialised nutritional research is at Wageningen.

The three chapters of ‘Food, Nutrition & Behaviour - Research for healthy eating, healthy living’ set out the broad spectrum covered by nutritional research at Wageningen. Wageningen UR research teams investigate how eating patterns may lead to coronary and vascular disease, obesity and cancer and how different consumer groups can be encouraged to choose healthy or sustainable food. Solutions to food allergies are being sought, meat substitutes are being developed, existing food products are being made healthier without losing their flavour, and preservation techniques are being improved.

The first chapter is devoted entirely to the effects of food on human health, the second reviews the research on eating patterns and lifestyle, and the third addresses the production, storage and distribution of food. The authors, Dr Charon Zondervan and Professor Pieter van ’t Veer, explore nine themes concisely in each richly illustrated chapter.

Showcases
The showcases at the end of each chapter demonstrate beyond doubt that food science can lead to very useful and practical applications. Thanks to knowledge developed in Wageningen, state-of-the-art research facilities and an excellent collaboration with businesses, government agencies and health organisations, better food is actually being produced which contains less salt or fat or is more suitable for people with a food allergy. A unique partnership with the nearby Gelderse Vallei hospital has led to better counselling for both malnourished and obese patients.
